Chicken And Onion Mix

Ingredients:

·3 tablespoons extra virgin essential olive oil

·1 yellow onion, roughly chopped

·2 teaspoons thyme, chopped

·2 garlic cloves, minced

·A pinch of black pepper

·4 chicken breasts, skinless, boneless and cubed

·½ teaspoon oregano, dried

·1 and ½ cup low-sodium beef stock

·1 tablespoon parsley, chopped

Directions:

1.Heat up a pan with 2 tablespoons extra virgin organic olive oil over medium-low heat, add the onion, black pepper and thyme, toss and cook for 24 minutes.

2.Add garlic, cook for 1 more minute and transfer to your bowl.

3.Clean the pan, heat it down with all the rest of the oil over medium-high heat, add chicken, black pepper, and oregano, stir and cook for 8 minutes more.

4.Add beef, add the onion mix along with all the parsley, toss, cook for ten mins, divide into bowls and serve.
